Traditions are perhaps the most wonderful part of our Eid celebrations but do you really want to treat your guests to the typical chana chaat, fruit chaat, dahi bhallay menu? I know I get tired of the same thing everywhere I go. Add one of these scrumptious and innovative snacks on your cooking list to serve your guests on Eid.
1. Chicken on toast
1/2 cup chicken
1/2 cup green onion, chopped
1/4 cup flour
1/4 cup water
1 egg
1 tbsp. cornstarch
1 tsp salt
1/2 tsp sugar
1 tsp oil
1/4 tsp baking powder
5 slices of bread
Chop the prawns into small pieces. Place them in a bowl along with all of the other ingredients. Mix everything to form the topping. Cut the slices of bread into four triangles. Top the bread with the prawn mixture and spread it to the edges. Heat the oil to a medium heat and deep-fry the toasts topping side down for 2 to 3 minutes then turn them over and fry until they are golden brown.
Remove from the oil, drain on paper kitchen towel.
2. Garlic cheese bread
What you need:
1 French loaf
1/4 cup salted butter
1/2 tsp chopped garlic
1/4 cup shredded mozzarella cheese
1 tsp chopped parsley
Preheat your oven to 200 degrees and grease a baking tray with either oil or butter. Cut the French loaf diagonally into 1 inch slices.
Add the garlic and parsley to melted butter and mix it through. Using a butter knife, spread the garlic butter on the bread slices and place them on the baking tray. Top the slices of bread with the shredded cheese and bake in the oven for 10 minutes or till crisp on the outside and soft from the middle.
3. Pizza tarts
What you need:
Pizza dough
Pizza sauce
capsicum, cut in small cubes
onion, cut in small cubes
sausages, sliced
mushrooms, sliced
olives
sweet corn
Mozzarella cheese, shredded
a muffin tin
Preheat oven to 180 degrees Celsius and grease the muffin tin. Roll out a small piece of pizza dough into 10 cm wide circle. Place this inside the muffin tin and press on the sides and bottom. Repeat the same with the rest of the dough. Put 1 tablespoon of the pizza sauce inside each cup of pizza dough and spread it on the sides.
Add the sausages and vegetables inside the cups to fill them. You may add or omit vegetables according to your liking. Lastly sprinkle the shredded cheese on top and bake for 15 minutes or till dough is fully cooked and golden.
Remove from oven and serve while it’s hot.
4. Trifle shots
The best thing about these is that you can make them a day earlier and serve them straight out of the fridge.
What you need:
2 cups custard (I prepared mine from a packet)
1 packet jelly powder (whatever flavour you desire)
fresh fruits
200 ml heavy cream, whipped
1 ½ cups water
small glasses
Bring the water to a boil and pour in the jelly powder. Turn off the heat and mix the jelly till all particles dissolve. Pour the jelly in small glasses till it comes up to 1/4th of the glass’s height. Leave it in the fridge to set for 30 minutes. Once the jelly is set pour custard on top. Do not fill the glass leave ample space for fruits and cream. Place in the fridge to set for another 30 minutes.
Use any fresh fruits available in season. Peaches, mangoes and cherries are one of my favourite fruit combinations. Cut the fruit into small pieces and generously add it on top of the custard. Finish the shots with a dollop of whipped cream.
